Instructions to make Khaman:
- Combine all the dry ingredients together except emo fruit salt..
- Add greenchilli and hinge paste, lemon juice, sugar and salt, add water to get desired consistency.
- One the batter is ready, put a deep pan on stove and heat 2 cups of water till it simmers.
- Grease a dhokla plate with oil or use any plate with borders to buildup the dhokla.
- Put this plate on the steamer stand and keep it inside the water simmering pan.
- Now quickly mix eno salt and pour the batter on dhokla plate, as quickly cover the pan with lid.
- Let the KHAMAN cook properly check after 15 minutes by inserting a knife Inthe center of cooking KHAMAN, if the knife comes out clear that indicates KHAMAN is cooked.
- Now off the flame after 17minutes and garnish the KHAMAN with fresh grated coconut as coriander if you don't have coconut simply garnish with coriander and fried green chillies.
