  1. Wash and rinse all vegetables well..
  2. Finely chop it to medium sized and keep aside..
  3. Take a kadhai or a pan add oil, heat well, then add cumin seeds as it splutters, add asafoetida, then add chopped chilli and ginger. Saute and stir for few seconds..
  4. Then add chopped carrots and beans. Saute it for 2 to 3 minutes on medium to high heat..
  5. Now add turmeric powder, red,chilli powder, coriander powder, garam masala powder,sugarAnd stir and mix nicely..
  6. Take 2 or as needed tablespoon water and add in sabzi.Cover it with a lid and let it cook on low heat till it's cooked well. In between check and stir..
  7. Once it's cooked well,add kasuri methi and amchur powder and mix well..
  8. Cover it and let it cook for 3 to 4 minutes on low heat..
  9. Switch off the heat. Let it be covered for 5 to 10 minutes more..
  10. It's ready to be served with chapati, paratha or with dal rice etc..
