  1. Clean and soak dal overnight.
  2. Heat 1/2 ghee in pan and roast maida till golden brown.
  3. In a mixing bowl add atta,ajwain,1 tspn oil,salt now knead it properly.
  4. Mix sugar and water on the flame and dissolve your sugar you dont need to make chasni(syrup) just dissolve it.
  5. Grind both dal and crush your cinnamon,pepper,1 cardomom,laung roughly in mortal pestle.
  6. Heat 3 tspn oil in a pan add Crushed spices then dal fry it properly it will become non sticky to yr pan once fried. Tip use heavy base or non-stick kadai as it sticks..
  7. Cool the mixture.
  8. Now mix roasted maida to sugar water mixture and heat it while stirr to form little liquid consistency to halwa.
  9. Add dry fruits,1 black cardamom and 1/2 spoon ghee.your sira is ready.
  10. Now make balls of atta and fill it with dal mixture.
  11. Roll it like paratha.
  12. Now heat a skillet add bidai to it.
  13. In medium high flame dry roast first side till bidhai dries out.
  14. Now flip it another side at low flame for 30 sec.
  15. And cook it in direct flame till golden.
  16. Serve hot bidhai with Sheera,dahi gujiya and achar enjoy!.
