  1. In a large non stick pot add some olive oil. Pop in all your veg, garlic and parsley. Allow to sizzle fro a couple of minutes at a medium to high heat. Then add your chorizo to the mix..
  2. After a couple of minutes add the chicken, crushed chillis and the paprika to the pot allowing it to turn white. Turn the heat to low..
  3. Add the arborio rice,stir, the chicken stock and then the tomatoes. Not forgetting the salt & pepper too! Give it a good stir then cover the pot and allow to simmer for about 15 mins. Add the Parmesan and cover again..
  4. Lift the lid after the 20 mins, the rice should be cooked, not an overly soft grain. If it feels a bit too firm just leave for a few more mins. Serve with a nice fresh bread or tossed salad!.
