The ingredients needed to make Cauliflower Rezala:

  1. You need 400 gm of Cauliflower medium in size.
  2. Take 8-9 of kaju/cashew.
  3. Use 7-8 of kismish/ raisins.
  4. You need 1 tsp of poppy seeds.
  5. Provide 1 tsp of sesame seeds.
  6. Take 1 of onion chopped.
  7. Take 1 inch of ginger.
  8. You need 2-3 of green chillies.
  9. Take 1 tsp of kashmiri red chilli Powder.
  10. Provide 1 inch of Cinnamon stick.
  11. You need 1 of star anise.
  12. Prepare 1 of brown cardamom.
  13. You need 2 of Bay leaf.
  14. Use 4 of green cardamom.
  15. Take 2 tbsp of ghee.
  16. Take 2 tbsp of oil.
  17. You need 4 tbsp of curd.
  18. Take 2 tbsp of fresh cream.
  19. Use 1 tsp of rose water.
  20. Take to taste of Salt.

Steps to make Cauliflower Rezala:

  1. In a kadai add water and little salt. Boil the Cauliflower lightly. Do not over cook. Strain the water and keep the cauliflower aside.
  2. Making the paste - In a mixer add sesame seeds, poppy seeds and kaju grind dry. Later add little water and kismis and grind again in a smooth paste and keep aside.
  3. In a mixer add onion,ginger and green chillies and grind in a smooth paste.
  4. In a kadai add little ghee & oil. Fry the cauliflower cautiously without letting them turn brown. Keep aside.
  5. In a kadai add ghee & oil and temper with the garam masala ingredients with bay leaf. Then add ginger & onion paste and fry well..
  6. Then add the kaju paste to the kadai and fry well.
  7. Later add some whisked curd and Kashmiri red chilli Powder..
  8. Add some water to the kadai and boil for 2 mins.
  9. Add fried cauliflower once the paste comes to a boil. Then add 1 tsp ghee.
  10. Before turning off the gas add fresh cream and rose water.
  11. Cauliflower Rezala can be served with Naan or Parathas.
