  1. Provide 200 g of dried hanamame (giant Japanese runner beans).
  2. Provide 2 pinches of salt.
  3. Prepare 120-160 g of sugar (adjust to taste).

Instructions to make Sweet Hanamame:

  2. Drain the soaking water and put the beans in a pot. Pour in plenty of fresh water so the beans are well submerged..
  3. Turn heat on high until the water boils, then turn it to low and simmer the beans gently for 1 hour. If the beans start to poke out of the water, add more so they are covered again..

  5. After completely cool, strain the cooking water, which will be dark in color, and wash the beans..
  6. Repeat the simmering, cooling, and washing steps another 1 to 2 times until the skin of the beans has softened..
  7. Lastly, add the beans to the pot again with enough fresh water to just cover. Add the salt and sugar and simmer gently until the beans have soaked up the sweetness. Adjust the sugar if you like..
